Gooey Pumpkin Brownies
1/2 cup oat flour
1/2 cup peanut or almond flour (I use Protein Plus peanut flour – Amazon.com)
1/2 cup unsweetened cacao powder
1/2 tsp baking powder
1/2 heaping tsp salt
1/8 tsp cayenne pepper (for those who want a kick)
3 packets of SweetLeaf™ stevia
1/4 cup honey or liquid sweetener
1 cup canned pumpkin
3 tbsp melted coconut oil
3 tbsp unsweetened apple sauce
4 tbsp almond or coconut milk
2 tsp pure vanilla extract
1/2 -1 cup Enjoy Life™ chocolate chips
- Mix dry ingredients in a bowl. Mix wet ingredients in a separate bowl. Add them together and mix in chocolate chips.
- Press into an 8 x 8 pan.
- Bake at 350º for 30 minutes. You can test with a toothpick in the center and when it comes out clean, they are ready to pull out of the oven. (with a mitt)
- Cool & cut into squares! Try to only eat
one, ok two…
OK two…..hahahahaha!
