Wings Designed to Fly

Seventeen years have passed by,

she lifted her wings designed to fly.

 

A young girl, on her heels and by her side,

curiosity of this elementary-aged child:

 

“Mom, what are you’re doing?”

“Oh honey, I’m just putting on lipstick.”

“Can I have some too? I want to be like you.”

“Perhaps when you’re older dear.”

 

Those five words, I heard so many times.

The desire to grow up, always on my mind.

 

During thunderstorms, she would lay at my feet

making sure I was comforted as I fell asleep.

 

Firefly was her handle,

driving fast and fearless in that 80s model.

A Pontiac Grand LeMans to be exact,

with three young children in the back.

That California trip, my fondest memory:

Christmas of 1993 delivered endless glee.

 

We had our ears pierced together when I was eight years old.

A fun secret shared between us; one of only a few told.

 

If only she was around as that little girl grew up.

Her life made short after the discovery of a small lump.

 

Doctors and nurses were many,

I was too young to comprehend the activity.

 

“I’m sick and tired of being sick and tired”, she would say.

I remember those words clearly, like it was yesterday.

 

My father and aunt were close to comfort me,

this young girl, wanting her mother to be pain-free.

 

Not knowing what the next few years would hold,

friends and close family quickly filled our world.

 

A strong desire to help people in need

remained in my heart and helped me succeed.

 

Her faith, her love, her voice, her beauty:

She drew in many with her lovely personality.

 

Joyful energy gleamed from her soul everyday.

Always making time, she’d teach me how to pray.

 

Remembering the sound of her angelic voice,

“I love you more than you’ll ever know.”

 

Those eight words I’ve held most dear,

they have quieted many of my fears.

 

The Snapdragon, her flower of choice,

colorful and bright, surrounded her resting place.

 

A room full of people, most of them I didn’t know.

They all yearned to hug me; truly I wanted to lay low.

 

Sometimes in a dream, I see her beautiful face

filling my heart with joy until our next embrace.

 

Memories and photos that are left,

shall be treasured until I take my last breath.

 

Seventeen years have passed by,

setting goals and sweating goals

Do you ever wake up and tell yourself, “this is going to be a great day!” ? Oh, me too, but sometimes life gets in the way and there’s an immediate limit placed on your goal setting.

Maybe that’s why I am awake at 4 am writing…  Sometimes I feel there are so many things I want to do with my time, hardly anything seems to get accomplished. Yes, I am that list maker who makes lists about lists.

Carrying on, I made the commitment to myself that I will run at least 3 times a week since my husband and I have planned more half marathons next year beginning in February and I enjoy running. Monday morning goes by…I sleep past my alarm and no running happened. If you are a runner, you know that feeling.

I thought, ok Tuesday, I’ve got this. It comes…and goes without running. I also do yoga, so finding that balance between both can be cumbersome. I was happy I at least practiced yoga on Monday and Tuesday. I shared a mantra on Instagram that helped me during my run and encourage you to use it when you feel like quitting before you’re finished.

I am STRONG. I am TOUGH. I am GREAT.

Finally, Wednesday morning I give myself a little “kick in the ass” and wake up earlier than usual to get in a run. I did it! Even though it was ‘only a 5k’, it was my fastest 5k in a while! It gave me great energy and I was happy that day ONE of my goal was complete; or at least started.  🙂

Thursday was more yoga; yay for stretching out those tight hamstrings!

Friday morning comes, I had set my alarm for a little earlier, and BAM! I wake up and get in another 5k! It was almost as fast, but I sure sweat just as hard. My smile was just as big as I knew I could check off day TWO. A great yoga teacher once said, “The best things in life make you sweat.” And…all the thoughts come in!  You’re welcome.

I once read that it takes 20 days to start a new habit. I already feel like I have a habit starting getting up a little earlier for exercise. According to the WHO, 1 in 4 adults around the globe aren’t active enough. Read more facts HERE, its a great read and will most likely give you incentive to exercise if you aren’t currently active. If anything, I am exercising to reduce my risk of disease and just feel good!  🙂

when it’s cold outside…

Some may say I am a chocoholic and I would agree with that.

I walked outside today because the sun was shining so bright it was calling me; and I wanted some natural Vitamin D. Well, I got smacked in the face by the cold air! Maybe I’ll try again later…

So…I walked back inside to make some healthy baked treats!

So…I’m sharing with you my yummy Black Bean Brownies!

 

 

 

 

 

 

 

I got creative and used a silicone snowflake baking mold, but you don’t have to. I just like making pretty shapes!

OK, OK, OK….here’s the recipe!!!

 

Black Bean Brownies

1/2 cup black beans (rinsed and drained)
2 Tbs almond flour
2 Tbs coconut flour
1 Tbs flaxseed meal
2 Tbs Garden of Life Protein and Greens Chocolate
1 egg
1/4 cup eggwhites (or 3 eggs)
1/3 cup unsweetened apple sauce)
1/2 cup natural cacao powder
1/4 tsp sea salt
2 Tsp natural vanilla extract
1/4 cup coconut sugar (agave or maple syrup can be used)
2 Tbsp maple syrup (I used 2 packets stevia)
1 1/2 Tsp instant or regular coffee grounds (unused)
1 Tsp aluminum free baking powder
1/8 tsp cayenne pepper …if you want a little kick!  😉
1/4 Enjoy Life chocolate chips (or more if you’d like)

1. Pre-heat oven to 350 F.
2. Place all black bean brownie ingredients into your food processor or blender and blend until smooth.
3. Spray an 8×8 baking dish with a healthy, non-stick cooking spray.
4. Evenly spread batter into baking dish or silicone mold
5. Place in the oven and bake for 25 min. (oven times may vary – use toothpick and check when it comes out clean they are done!)
6. Remove from oven and cool for about 10 minutes.
7. Cut brownies, serve, enjoy, and share with a friend!
8. Store cooled brownies in a sealed container in the refrigerator or freeze in freezer safe container.

Gooey Pumpkin Brownies

Gooey Pumpkin brownies

Ok…here is the amazing recipe friends~

Gooey Pumpkin Brownies

1/2 cup oat flour
1/2 cup peanut or almond flour (I use Protein Plus peanut flour – Amazon.com)
1/2 cup unsweetened cacao powder
1/2 tsp baking powder
1/2 heaping tsp salt
1/8 tsp cayenne pepper (for those who want a kick)
3 packets of SweetLeaf™ stevia
1/4 cup honey or liquid sweetener
1 cup canned pumpkin
3 tbsp melted coconut oil
3 tbsp unsweetened apple sauce
4 tbsp almond or coconut milk
2 tsp pure vanilla extract
1/2 -1 cup Enjoy Life™ chocolate chips

  • Mix dry ingredients in a bowl. Mix wet ingredients in a separate bowl. Add them together and mix in chocolate chips.
  • Press into an 8 x 8 pan.
  • Bake at 350º for 30 minutes. You can test with a toothpick in the center and when it comes out clean, they are ready to pull out of the oven. (with a mitt)
  • Cool & cut into squares! Try to only eat one, ok two…
